Resep Bakpia Pathuk Jogja, Rasanya yang Legendaris Selalu Bikin Kangen

Selain gudeg, kudapan khas Yogyakarta yang tidak boleh Bunda lewatkan adalah bakpia Jogja. Bakpia adalah kue yang terbuat dari campuran kacang hijau dan gula, dibalut dengan kulit yang terbuat dari tepung kemudian dipanggang. Bakpia sebenarnya berasal dari Negara Tirai Bambu, Cina, aslinya bernama Tou Luk Pia, yang artinya adalah kue pia kacang hijau. Semenjak diperkenalkan di Yogyakarta, bakpia mulai diproduksi di kampung Pathuk, sejak sekitar tahun 1948, sehingga sering disebut bakpia Pathuk.

Nah setelah sedikit mengetahui sedikit sejarah Bakpia Jogja, rasanya semakin kangen dengan kudapan manis yang bikin nagih ini ya Bun. Yuk langsung kita tengok resep Bakpia Jogja di bawah.

Bahan-bahan yang diperlukan

Kulit:

Bahan A:

  • 250 gram tepung terigu serba guna
  • 50 gram caster sugar (bisa pakai gula pasir biasa)
  • 25 gram mentega tawar, suhu ruang
  • 25 gram margarin, suhu ruang
  • 1/4 sdt garam halus
  • 80-100 ml air

50 ml minyak canola, bisa gunakan minyak sayur yang lain

Bahan B:

  • 100 gram tepung Terigu
  • 30 gram margarin suhu ruang
  • 30 ml canola oil (bisa diganti minyak biasa)

Bahan isian:

  • 100 gram kacang hijau dengan kulitnya, rendam 1 -2 jam
  • 1/4 sdt garam
  • 5 sdm gula pasir
  • 100 ml santan kental
  • 1 sdm vanilla extract
  • 1 lembar daun pandan

Setelah semua bahan siap, kita lanjutkan Cara Membuatnya

  1.  Membuat bahan isian: rebus kacang hijau sampai empuk, tiriskan
  2.  Haluskan kacang hijau
  3. Siapkan wajan anti lengket, tuang kacang hijau halus tambahkan gula garam vanilla extract dan santan. Aduk-aduk sampai kalis
  4.  Timbang seberat 15 gram (atau bagi menjadi 22 sama besarnya) bentuk bulat-bulat pipih. Sisihkan
  5.  Membuat kulitnya

Bahan A: campur terigu, gula, garam, minyak, margarin dan mentega lalu susul dengan air sedikit demi sedikit, saat adonan dirasa sudah bisa dibentuk,  hentikan penambahan air. Aduk-aduk sampai rata dan kalis.

Campur semua bahan B

  1.  Ambil adonan A, kurang lebih 20-22 gram (atau bagi jadi 22 buah sama besarnya) gilas
  2.  Lalu ambil adonan B Kurang lebih 10 gram taruh di atas adonan A, gilas lagi
  3.  Taruh bahan isian
  4.  Bentuk bulat pipih
  5.  Panggang di suhu 180⁰C selama 30 menit, setelah 15 menit pertama balik bakpianya.
  6. Keluarkan dari oven, dan dinginkan

Bakpia Jogja siap tersaji di rumah Bunda, sajikan bersama secangkir teh atau kopi hangat, yummy.. kenikmatan tiada tara. Dan rindu akan salah satu kudapan khas Yogyakarta ini pun terobati sudah.
