RESEP PEMPEK ASLI KHAS PALEMBANG

Pempek atau empek-empek adalah makanan yang terbuat dari daging ikan yang digiling lembut yang dicampur tepung kanji atau tepung sagu, serta komposisi beberapa bahan lain seperti telur, bawang putih yang dihaluskan, penyedap rasa, dan garam.

Jajanan khas Palembang yang terkenal ini selalu berhasil memanjakan lidah kita. Berbahan dasar ikan, pempek memiliki rasa gurih dan menggigit. Apalagi pempek wajib dihidangkan dengan cuko yang asam manis, rasa pempek jadi semakin enak.

Bahan :

  • 350gr ikan, haluskan dinginkan dikulkas
  • 25gr tepung terigu
  • 150gr tepung sagu atau tapioka
  • 3 siung bawang putih,haluskan
  • 1butir telur kocok lepas
  • 1sdm garam
  • 1sdt gula
  • Merica secukupnya
  • 6butir telur untuk isian

Cara Membuat :

  1. Haluskan ikan sampai membentuk pasta.
  2. Tambahkan kocokan telur, aduk rata sampai menyatu, tambahkan bawang putih halus, garam, gula dan merica, aduk rata.
  3. Masukkan tepung terigu, dan tepung sagu secara bertahap sedikit sedikit, jgn lebih dari banyaknya ikan, klo ikan 350gr tepung sagu maksimal 200gr, biasa kurang dr itu, adonan memang agak lembek, jadi kalau dirasa sudah pas langsung saja dibentuk
  4. Lumuri kedua telapak tangan terlebih dahulu. Ambil adonan sekepalan tangan bolongi tengahnya dengan jari jempol kanan, bikin seperti mangkuk. Isi dengan telur . Tutup perlahan dengan cara mencubit-cubit bagian atasnya.
  5. Masukkan langsung kedalam air mendidih yg diberi sedikit minyak supaya tdk lengket. Angkat pempek apabila sudah mengambang. Tiriskan dan digoreng atau bisa disimpan di frozen.
  6. Untuk pempek lenjer, siapkan talenan lumuri dengan tepung sagu diatasnya. Ambil adonan secukupnya lalu gulingkan perlahan diatas talenan hingga membentuk seperti pipa. Rebus hingga matang.
