Resep Chiffon Pandan. Kue Favorit Sepanjang Masa

Gak habis-habisnya kalo ngomongin cake yang satu ini ya bun, chiffon cake. Penasaran dan selalu penasaran untuk mencoba varian yang beda-beda. Karena sebenarnya membuat chiffon cake hampir mirip seperti membuat cotton Japanese cheesecake. Adonan pertama umumnya memiliki tekstur pekat dan kental, namun ketika meringue (putih telur yang dikocok hingga kaku bersama gula ) dimasukkan dan diaduk maka adonan secara keseluruhan akan menjadi ringan dan fluffy. Chiffon pandan adalah kue favorit sepanjang masa karena teksturnya yang lembut, moist, maknyuuss. Cucok banget buat yang pengen nyemil cantik dan gak bikin berat badan naik hehehe...

Tahu ngga bun, ternyata chiffon cake ini diciptakan pertama kali pada tahun 1927 oleh Harry Baker, seorang sales asuransi di California yang kemudian beralih profesi menjadi pengusaha catering. Baker menyimpan resep ini secara rahasia selama 20 tahun hingga kemudian dia menjualnya ke General Mills. Setelah itu nama cake ini kemudian berubah menjadi 'chiffon cake', dan satu set resep yang terdiri atas 14 resep dan variasinya kemudian dilepas ke khalayak ramai melalui pamflet Betty Crocker pada tahun 1948.

Bahan - bahan :

Bahan 1:

  • 3 bh telur (pisahkan putih dan kuning)
  • 80 gr gula (suka manis boleh 100 gr)
  • 1/4 sdt garam

Bahan 2: (campur+aduk rata)

  • 60-80 ml santan/susu (saya pake santan instan kecil/65 gr)
  • 40 ml olive oil/minyak sayur
  • 1/2 sdt pasta pandan
  • Bahan 3: (ayak)
  • 90 gr tepung beras

Langkah - langkah :

  1.  Kocok putel+garam sampe berbusa. Masukan gula bertahap 3x. Kocok sampe kaku/soft peak. (Mixer high speed)
  2.  Turunkan ke speed sedang. Masukan kuning telur satu persatu. Kocok sampe tercampur rata.
  3. Turunkan ke speed rendah. Masukan bahan 2 (cairan) Mixer rata bentar aja.
  4.  Masukan bahan 3 (tepung). Mixer rata bentar aja. (Jangan overmix, bisa bantat).
  5.  Siapkan loyang chiffon 17 cm (jangan oles apa-apa). Saya pake loyang 24, gak punya yang 17 hehe. Tuang adonan. Panaskan oven 180C. Panggang 35 menit.
  6.  Setelah keluar dari oven, tebalikan dan diamkan sampe bener-bener suhu ruang. Lalu keluarkan dengan bantuan pisau kue. Potong sesuai selera.
  7.  Voilaaa...Chiffon Pandan (Gluten Free) is ready! Lembuut ngempuss
  8. Chiffon Pandan (Gluten Free) Sudah jadi, siap untuk disajikan!
