Resep Martabak Telur Rumahan Simpel, Crunchy, Nikmat

Kalau Bunda sudah sering bikin martabak telur rumahan pakai kulit lumpia, saatnya naik kelas. Sekarang cobain yuk, bikin Martabak Telur yang rasanya mirip bikinan abang-abang penjual martabak. Walau begitu kita bikin dengan cara lebih simpel saja ya untuk membuat tipis adonananya, yaitu dengan digilas rollpin. Oke?

Rahasia Martabak Telur si abang-abang martabak itu memang pada kulitnya yang tipis renyah dan gurih. Untuk membuatnya memang perlu skill khusus ya Bun, tapi bisa kok kita siasati pakai rollpin, walau masih sedikit lebih tebal, tapi crunchy-nya dapat banget. Biar makin oke, isinya juga pakai bumbu kari ya Bun biar mirip.

Dan berikut sudah kami siapkan resep komplitnya dari pembuatan kulit, isian, dan cara menggorengnya. Yuk, simak!

Bahan-bahan :

Bahan Kulit

  • 125 gr tepung terigu protein tinggi
  • 1/4 sdt garam
  • 1,5 sdm minyak canola (bisa pakai minyak goreng yang lain)
  • 80 ml Air

Rendaman

  • 400 ml minyak goreng (sampai adonan terendam semua)

Bahan Isi

  • 150 gr daging sapi giling
  • 3 siung bawang putih cincang
  • 1/2 buah bawang bombay cincang
  • Secukupnya gula garam kaldu bubuk
  • 5 batang daun bawang, potong-potong
  • 5 butir telur (bebek atau ayam, opsional)
  • 1/2-3/4 sdt bubuk kari (sesuai selera)

Secukupnya margarin untuk menumis

Cara Membuat :

  1. Kulit : Campur semua bahan kulit, uleni sampai kalis
  2. Bagi menjadi 4 bagian sekitar @50-52 gram, bulatkan, lalu beri minyak goreng sampai menutupi permukaan adonan. Diamkan kurang lebih 1-2 jam (semakin lama semakin lentur)
  3. Sambil menunggu adonan kulit, buat bahan Isian: panaskan margarin tumis bawang putih dan bawang bombay sampai harum, tambahkan daging giling, masak sampai matang. Biarkan dingin. Sisihkan
  4. Setelah 1 atau 2 jam, ambil satu buah adonan, gilas dengan rolling pin sampai lebar.
  5. Penyelesaian: Masukkan tumisan daging ke dalam wadah, tambahkan telur daun bawang, gula garam, bubuk kari dan kaldu bubuk. aduk rata.
  6. Panaskan teflon yang telah diberi minyak, kecilkan api kompor, bentangkan kulit martabak di atas teflon tadi, tuang secukupnya tumisan daging dan telur kocok tadi, lipat, lalu naikkan api menjadi sedang goreng sampai permukaannya kecoklatan, lalu balik, goreng lagi sampai kedua permukaan kecoklatan.
  7. Angkat, tiriskan, potong-potong dan sajikan dengan acar mentimun.
